Pakbet or
Vegetable stew is a vegetable Filipino recipe, originated in Ilokano, usually
they add pork but if you are vegetarian you have an option not to add it. You
can also alternate the shrimp paste to fish sauce or salt.
INGREDIENTS;
- Bitter melon (ampalaya)
- Finger lady (okra)
- Garlic
- Onions
- Tomatoes
- Water
- Squash
- Shrimp paste (bagoong)
- Cooking oil
- Sweet potato (kamote)
- String beans (Sitaw)
- Fish sauce and pepper
Let's begin cooking!
1. Heat the pan and put cooking oil
2. Sauté the garlic, onions, shrimp paste and tomato.
3. Add the squash and sweet potato and water.
4. Cover and let it simmer.
5. Uncover, add the bitter melon, okra and string beans.
6. Cover the pan and cook over high heat, bring it to the boil.
7. Cook until the vegetables are done. Don't overcook because the vegetables will lose their bright colors and become mushy.
8. Taste it, add fish sauce or pepper to taste.
