Mini Peanut Butter Bread


I was planning to make peanut butter cookies, but in the middle of cooking I decided to make a peanut butter bread and surprisingly it was good and yummy.



Here are the ingredients you need;
  • 2 tbs all-purpose flour
  • a pinch  baking soda
  • a pinch of salt
  • 3/4 tbs butter, melted
  • 1 tsp packed brown sugar
  • 1 tsp cup white sugar
  • vanilla extract
  • 1 whole quail egg + 1  quail egg yolk 
  • peanut butter


Directions:
1. Preheat oven to 325.
2. Whisk together flour, baking soda, and salt in a bowl.
3. Stir butter, white sugar, and brown sugar until well combined.
4. Add in egg and egg yolk and vanilla extract to butter and sugar mixture, and stir to      combine.
5. Grease the pan
6. Pour the combined ingredients into the baking pan.
7. Bake it for 15 min to 20.

Mini Pork Steak



Pork steak is marinated in soy sauce, calamansi and Onions for over night or 4 hours. In Philippines we call it a Bistek, a version for beef steak. I will show you my recipe. I add crushed garlic to make it tastier. The challenging step here is frying but this recipe is delicious and worthy.


The following are needed:

  • Vegetable oil
  • Garlic (crushed and minced)
  • Onions (minced and cut into ring)
  • Calamansi
  • Soy sauce
  • Pork chop
  • Pepper




Direction:

Marinate the pork in soy sauce, calamansi, garlic and onions for 4 hour or over night.

Heat the oil in a low med-high.

Cook the pork for 1 min. flip and cook or until the chops are golden brown on the other side
Pour the sauce and let it simmer for 2 min.

Add pepper to taste.

Serve with steamy hot rice!

Mini Sotanghon with Meatballs

Sotanghon is one of the favorite soups in rainy and winter seasons.  
It is a cellophane noodles also known as Chinese vermicelli,  are a type of transparent noodle made from starch (such as mung bean starch, yam, potato
starch, cassava or canna starch), and water.

Last episode I made a chicken meatballs and the last episode I made a chicken meatballs and this is will add in our recipe today, to add more flavor on our sotanghon soup.

Here are the ingredients that needed;

  • Vegetable oil
  • Garlic
  • Onions
  • Carrots
  • Cabbage
  • Pepper & salt to taste
  • Fish Sauce
  • Chicken Stock
  • Onion leaves

Method:
In a pot over medium heat, pour the vegetable oil.
Saute garlic, onions, fish sauce and cook, add chicken stock bring to a boil. Add carrots until cook.
Add noodles, gently drop the meatballs, bring it to a boil, add pepper and salt to taste, add cabbage cook for 30 seconds.
Garnish with spring onion

Mini Chicken Meatrballs

One of the favorite of children and adults is chicken meat and one of the favorite recipes is fried chicken, but since this is a common dish, I would like to try another recipe a chicken meatballs. I know this is also a typical recipe, but on my own version, I'm sure you like it.  
 
Chicken meatballs main ingredients are chicken breast and some veggies, to form a ball shape you must need to add egg or flour. 

For today recipe we need the following 
ingredients:
  • Chicken
  • Onions
  • Carrots
  • Egg
  • Pepper
  • Oil (for frying)
Method:
In a miniature bowl mixed all the ingredients
except oil.
Roll tablespoons of this mixture into balls
Heat the oil in a frying pan and fry the meatballs over a medium heat, turning constantly 
These only take 3-5 minutes to cook through
Serve.

MIni Cheesy Baked Mac

Cheesy baked macaroni is easy yet delicious recipe. Anyone can do it. Even kids can follow 
this simple instruction. 


Here are the ingredients we need:
  • Elbow macaroni
  • Water (for cooking pasta)
  • Cheese
  • Bread crumbs
  • Egg
  • Milk
  • Butter
Preparation:
Cook pasta according to the package’s instruction. Add more salt once the water started to
simmer. Drain and set aside. 
Combine and mix well using the wire whisk: the egg, grated cheese, bread crumbs, milk, 
pepper and butter.
In a baking dish place the drained macaroni and mixed ingredients. 
Add grated cheese and bread crumbs on top.
Place it preheated oven and bake it for 15 
minutes. 
Serve.

Mini Creamy Tuna Pasta


Pasta is an all time fave dish of all ages. No wonder why many of my viewers on YouTube requesting for pasta. I was hesitant to make pasta dishes because first I was looking for smaller pasta strands that it won’t look giant on my 1:3 scale plate; gladly Ms. Tic suggested that I should try the angel’s hair pasta and she’s right, this is the perfect scale for my plate.




I've already tried to cook tuna pasta in normal serving twice and what I can say is that this recipe is really good. 
Today, I would like to share the recipe mini tuna pasta in 1:3 scale, but you can also try this in big scale just make an adjustment for the amount of ingredients.





Here’s the following you need:

  • 1 tsp of minced garlic and onions
  • 1 & ½ tsp of green bell pepper
  • 2 tsp of cheese (I used cheddar cheese, you can try any cheese)
  • ½ tsp of butter
  • 1 tbs pf milk
  • 1 quail egg or 1 & ½ of tsp of beaten chicken egg
  • 1 tbs of can tuna flakes in oil or water
  • Pepper & salt


Here’s how I made it.

Pasta:


Cook pasta in a saucepan of boiling, salted water, follow the packet's directions. Drain then set aside.

For sauce;

  • Combine the milk, egg, salt, pepper and cheese. I know some of you react on “too much pepper”, but don’t judge it yet until you will taste it. Besides everyone has different taste buds so again you can adjust the measurement of the ingredients.
  • Melt butter in a saucepan over medium heat,
  • Saute garlic and onions, then add drained tuna, let it simmer for few seconds then add the green bell pepper and pour the mixed milk, stir and let it simmer.
  • Add pepper and salt to taste.
  • Prepare the pasta on your preferred miniature plate and add tuna sauce.
  • Sprinkle cheese.

Mini Tuna Empanada


Filipino empanadas usually contain ground beef, pork or chicken, potatoes, chopped onions, and raisins (somewhat similar to the Cuban picadillo) in a somewhat sweet, wheat flour bread. There are two kinds available: the baked sort and the flaky fried type. But today, I will make my own version of healthy way cooking of empanada instead of red or white meat; I’m going to use tuna.

By the way 1 divided it into two part video. First, is how to make an empanada dough. Second, is how to make a tuna filling.

Since I'm going to use can tuna I assure you that this is definitely tastier, mine was Century Tuna flakes in oil flavor but you can use your preferred brand. 



In making mini dough, what I did was instead of putting 2 and ½ cups of flour I made it to 2 and ½ Tbs. Yes I used the tablespoon since I will make mini dough and I was not sure if this would work and thank God I made it, though it was not perfect.

Maybe, many are wondering on what does it taste like. 
If you will follow the exact measurement and the procedure I can assure you that the taste is not that bad, surprisingly i'ts really good,

Here are the following ingredients:


For tuna filling
  • 0.615 ml oil                                     
  • 1 tsp garlic
  • 1 tsp onions
  • T tbs can tuna (oil or water)
  • 1 tsp & ¼ tsp of green bell pepper
  • 1 tsp & ¼ tsp of Carrots
  • ½ tsp of soy sauce
  • ½ tsp of catsup
  • Pepper and salt to taste.                        
  You may adjust the ingredients.




Let’s start cooking:



Heat the casserole, pour the oil


Add garlic, let it cook or until it turn to light brown


Add the onion; cook it until it appears translucent.



Add tuna and soy sauce, then let it simmer.



Add the green bell pepper, carrots and catsup; let it simmer for few minutes.





For the decoration, I made little bowl from green bell pepper.


Serve!!!
